01 / ABOUT THE PLACE
About this place
Set in a quiet stretch east of the Togoshi Ginza shopping street, Okina crafts handmade nihachi soba—an eight-to-two buckwheat-to-wheat blend—noted for its rich aroma and firm, toothsome bite. Whether ordering thick, rustic inaka-style strands or delicate, smooth noodles, dipping them into the umami-laden dashi broth brings out the buckwheat's natural character.
Lunchtime Sobazen and Steaming Kamo Nanban
A weekday highlight on the lunch menu is the sobazen set, which gathers small side dishes, freshly fried tempura, chawanmushi savory egg custard, and a sweet finish around a bowl of noodles. Served with salt and dipping broth, the crisp tempura and carefully composed bites create a satisfying midday meal. For something warm, the kamo nanban is crowned with generous slices of thick duck breast, whose rich meat and fragrant seared scallions deepen the comforting broth.
Quiet Evenings over Small Dishes and Sake
The selection of sobamae—small plates traditionally enjoyed before the noodles—is equally thoughtful, featuring rustic items like yaki-miso, braised whelk, and duck seared on a ceramic plate. With the owner handling the entire operation solo, dishes arrive at an unhurried pace, inviting diners to relax and enjoy the serene, focused atmosphere.
